I would like to make a 2 or 3 day visit to Beijing, arriving from Busan, and then onto Hong Kong SAR. I wanted to make sure that the flights don't need to be connected, to be able to use your transit visa policy (I have a UK passport), as the two flights will be from different airlines.

If the two flights belong to different airlines, it will not affect your eligibility for the visa-free transit policy. With a British passport and following the itinerary: Busan-Beijing-Hong Kong, you are eligible for a 240-hour visa-free transit.
