Quanjude was established in 1864. It has witnessed the passing down of a long-standing culinary heritage, silently recording at the same time the pains and gains of generations. In the past century, Quanjude's menu has been constantly upgraded and enriched. Political leaders and dignitaries from hundreds of countries and regions have graced the restaurant, making the place a significant platform for the promotion of Chinese food culture and the furtherance of Sino-foreign communication and cooperation. Besides roast ducks, the restaurant also has other creative offerings like the whole-duck feast and celebrity feast, developing in its kitchen an inclusive culinary culture.

The Quanjude Peony Roast Duck was served for the first time at the APEC State Banquet held in the “Water Cube” on November 10th 2014. As the epitome of Chinese cuisine, it has won international acclaim. To make a Peony Roast Duck, the chef of Quanjude Restaurant is very careful in the selection of the raw semi-processed ducks. When it comes to slicing, the duck breast meat is sliced with the skin, and then the 16 slices of breast meat are layered on a white plate at the order "7, 5, 3, 1" to give an impression of peony petals, while boiled towel-gourd seed lings make up the green stalk and leaves, providing a feast for not only the palate but also the eyes.
