Quanjude, founded in 1864, is a time-honored catering brand for Beijing roast ducks. Traditional cuisine skills have been inherited at Quanjude, where pretreated ducks are hung with a hook onto the ceiling of an oven and roasted over burning non-smoky hardwood.
Indeed, this unique cooking technique has been passed down for more than 150 years, and was listed as a national intangible cultural heritage in 2008.
Croatian photographer Martin Stokic visited Quanjuede and unveils the mystery of traditional roast ducks through his lens.
